We grew up on the bagels that built their neighbourhoods — the counters in New York where the queue is half the fun. Then we moved to Cambridge and went looking for the same thing.
We couldn't find it. Plenty of good food in this city — but a proper, hand-rolled, kettle-boiled bagel? Not really. So we decided to build it ourselves.
